Lao Food

Lao staples are sticky rice, fish, buffalo and cow meat, pork, poultry and herbs and vegetable, which are either cultivated or picked from the forests. Lao food is always freshly prepared and usually accompanied by Jaew, a spicy dip that comes in endless varieties. In Phonsavanh many local restaurants ofer Lao, Vietnamese, Thai, Indian, and Chinese food. A few places serve vegetarian and western dishes. One of the unusual foods Xieng Khouang is famous for is a type of sour swift which is called Nok Ann Toong. The swifts are captured, fermented and later fried or cooked in a stew.
